Cody’s Colorado Cornbread

Ingredients:
2 cups Nitty Gritty Pancake & Muffin Mix
½ cup milk
½ cup red or brown ale (we used Dogfish Head Raison D’etra)
4 tablespoons melted butter
2 eggs, beaten
2 green onions, chopped
1 fresh jalapeno, seeded and chopped

Directions:
Heat oven to 350°F. Lightly coat an 8 or 9-inch round or square metal baking pan with oil.
Measure NGG Pancake and Muffin Mix into a large bowl. Mix wet ingredients in small bowl and then fold into large bowl until blended well.
Bake 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
